Cocktail Sauce
Yield: 1 gallon
Cocktail sauce is a cold tomato sauce. It has
a hot, tangy taste and is usually served with cold
and cold seafood dishes.
Quantity Ingredient

2 qts.
1qt.
1 pt.
2 Tbs.
1 Tbs.
1 cup
1 tsp.
2 Tbs.
1 tsp.
2 Tbs.

Catsup
Chili sauce
Tomato puree
Lemon juice
Green pepper, minced
Horseradish
Salt
Worcestershire sauce
Tabasco sauce
Onions, minced

Preparation & Procedure
  1. Mince onions and green peppers using a French knife.
  2. Squeeze juice from lemons.
  3. Have all equipment and ingredients at hand.

  4. Place all ingredients in a stainless steel container and blend thoroughly using a kitchen spoon.
  5. Adjust seasoning if a hotter sauce is desired.
  6. Serve 2 to 3 ounces per portion in a soufflé cup with hot or cold seafood items, such as shrimp, oysters and crabmeat.
