Wild Mushroom Pesto Pasta

Cooked Pasta noodles                                     

Mushroom stock (Base & Water)

Sliced Portabella Mushrooms

Sliced Button Mushrooms

Sliced Oyster Mushrooms

Olive oil

Fresh chopped garlic

Fresh Diced tomatoes

Roasted Pine Nuts

Tomato Basil Pesto Sauce

Preparation

1.      Sauté pine nuts in hot olive oil.

2.      Remove pine nuts when browned and set aside.

3.      Sauté mushroom in oil and add garlic.

4.      Add mushroom stock.

5.      Add tomato basil pesto sauce.

6.      Add pasta to pan.

7.      Add diced tomatoes and save a little for top.

8.      Place in pasta bowl.

9.      Top with diced tomatoes and pine nuts.

Have server finish at table with fresh grated Parmesan Cheese or fresh cracked ground pepper.
